Blueberry Apple Butter Coffee Cake

Here’s what you need:

2 cups Baking Mix- I used Trader Joe’s multigrain mix
1 cup Buttermilk (I used 1/2 cup Reduced fat buttermilk and 1/2 cup Almond Milk)
1 egg
3/4 cup blueberries
2 tablespoons of apple butter- I used a no sugar added Apple Butter that I found @ Homegoods
1/2 cup Splenda or Stevia (whatever your sweetener of choice may be)
1 tablespoon oil
oats and brown sugar optional

Mix it all together in a bowl and pour it into a greased 8×8 Pyrex. I sprinkled some oats and brown sugar on top.

Bake 350 for 30-40 minutes while hubby snoozes. The smell will wake him up.

Took a little walk around the garden and noticed I have a LOT of Roma tomatoes. When these babies are red, I am going to make a mean tomato sauce.
