I used to make cookies like this all the time when I was on Atkins with LOTS of butter and no flour. This version better fits my current food philosophy.
1 cup organic oats
1/4 cup whole wheat flour
2 heaping tablespoons of ground flaxseed
1 teaspoon baking powder
1 tablespoon EVOO
1 teaspoon vanilla
Organic Blue Agave Sweetener
pinch of salt
Combine dry ingredients. Add egg, vanilla, Agave and honey. Mix well Divide into balls on cookie sheet. Bake 10 minutes at 350 degrees.
Feel free to add nuts or dried fruit or whatever! Nom nom!
