Cheap and Easy Chili

The slow cooker is back! This time, it’s chili! I decided to use dried beans because they are so cheap. I actually made a whole pot of chili for about 5 bucks. It takes a little planning but using dried beans is way more economical than canned.

The night before, soak the beans in water. I used 1.5 cup of Great Northern beans and 1.5 cup of Red beans in 6 cups of water. No salt in the water! It ruins the integrity of the bean (seriously).

When you wake up they will look like this.

Add a big can of tomato and some stock.

Add spices

Turn it on low, put the lid on, and go to work.

Appetizer was Peach Salsa (Yum!) and chips from Trader Joes.

I added a dollop of Greek Yogurt. Nom Nom!
