Indian Vegetarian Chili

I started dinner this morning sometime around 6AM. I was only partially conscious and not entirely sure what I had put in the crock pot. I was happy to find when I returned home from work that all the ingredients were, in fact, appropriate. I used up the rest of the beans which I had soaked overnight.

With the beans I added:

1 can tomato paste
1 cup chicken stock
3 cups water
2 garlic cloves, chopped
1 medium onion, chopped
thyme
salt and pepper
Cayenne pepper
and generous shakings of garam masala and ancho chile powder.

…and a dollop of sour cream. I thought it was hot enough with the cayenne and chile powder but hubby added stink sauce to his. Sigh.

It was good! Perfect Monday night dinner. I love my crock pot!

    I have to admit I was curious about the words “Indian” and “chili” in the same recipe title, but it sounds nifty. I'd have to use vegetable stock and skip the sour cream, but otherwise, yum. Oh, and the last time I got a bit generous with the garam masala (that smelled so innocent and sweet- literally) I about blew the top of my head off! Dang! That had firepower, and I'm all sorts of a wimp!

    Yeah, I guess it is more 'Indian inspired' and not really vegetarian (opps) 😉 It was pretty tasty, I love garam masala!
