I started dinner this morning sometime around 6AM. I was only partially conscious and not entirely sure what I had put in the crock pot. I was happy to find when I returned home from work that all the ingredients were, in fact, appropriate. I used up the rest of the beans which I had soaked overnight.
With the beans I added:
1 can tomato paste
1 cup chicken stock
3 cups water
2 garlic cloves, chopped
1 medium onion, chopped
salt and pepper
and generous shakings of garam masala and ancho chile powder.
…and a dollop of sour cream. I thought it was hot enough with the cayenne and chile powder but hubby added stink sauce to his. Sigh.
It was good! Perfect Monday night dinner. I love my crock pot!
