Here I go again…
Tonight is homemade pasta sauce on whole grain penne with breaksticks!
But first a little tangent…Acorn squash!
Sprinkle some cinnamon, drizzle with EVOO, and roast at 400 degrees until tender.
Back to the pasta…
Saute 1 medium onion and 2 garlic cloves.
Pour in big can of crushed tomatoes.
A big drizzle of balsamic vinegar…
About a 1/2 cup of wine.
Bring to a boil and then turn down the heat and let it simmer until it is thick.
Enjoy with a glass of wine.
Close up of acorn squash. It was delish! Buttery smooth and nutty and sweet. Yum.
