I had a very long work day today and a long list of things to get done after getting home so a quick dinner was a must. I often hear from people that they find cooking difficult because there just isn’t enough time. I completely understand that feeling and I promise that I do sleep (some) and I definitely don’t cook lamb roasts on a weeknight. Here is a dinner idea that is quick, balanced, that doesn’t make a big mess you will have to clean up afterward.
Turkey Pasta Bake
1.25 lb ground turkey
2.5 cups whole wheat penne (or whatever you like)
1 large bunch of Swiss chard
1 garlic clove
1 medium onion
1 can crushed tomato
3/4 cup shredded cheese
1/4 Parmesan cheese
salt and pepper
Saute onion in 1 tablespoon EVOO, add turkey. Cook pasta while meat is browning.
When the meat is browned, place in a mixing bowl. Add another tablespoon of EVOO and chopped garlic clove to the meat pan and saute swiss chard.
Dump all ingredients in mixing bowl.
Place in 8×8 Pyrex and bake 350 for 15 minutes.
This took me about 30 minutes total including the 15 minute bake time.
Feel free to substitute different types of pasta (I originally wanted rigatoni) or greens. Spinach would work!
