Stuffed Acorn Squash Equals Awesome!

When I got home, one of my Amazon packages had arrived. An entire box of Pumpkin Spice for the the Keurig!!

Score!

Anyway, back to dinner. Tonight’s dinner was awesome. I came across this recipe over at Eating Well, made some adaptations and got going.

Saute peppers and onions, black beans, sausage, and can of tomato paste.

2 Trader Joe’s Jalapeno chicken sausage links
1 medium onion
1 red pepper
1 can black beans
1 can tomato paste
1 big handful of swiss cheese (added at the end)
salt and pepper

Ok, here is the fun part. I used an acorn squash as an edible bowl! Cut tops of squash, scoop out the seeds and roast cut side down for 45 minutes at 375 degrees.

Stuff the squash with your stuffin’

Feed your hubby.

Yum! These were insanely good. I highly recommend. I completely forgot to add the spices that the recipe called for (cumin, chili powder- opps) and they were still delicious! The squash was like buttery velvet and the stuffing was flavorful and a tad spicy!
