Sufferin’ Succotash with Sauteed Swiss Chard

Pretty soon after I finally got home from work it was time to start some dinner. But what to make??

I decided to make an easy, quick dish: succotash with okra, and grilled corn. I used Great Northern white beans instead of lima beans.

Add a can of tomato paste.

Spice time! I love this ancho chili powder.

Sauteed up some rainbow swiss chard in EVOO, fresh garlic.

Serve with a glass of crisp white wine.

It was very tasty and there was enough for my lunch tomorrow.

My original plan was to get up early this morning and workout before starting my long commute to work but that just didn’t happen. The bed was far too warm and comfy and I was not ready to get out of it at 5AM. I did, however, get on the treadmill this evening and the plan is to do the same tomorrow!
