Veggie Lasagna

Tonight’s dinner: Veggie Lasagna (mostly/kinda organic)

I was excited to try these lasagna noodles. Organic, whole wheat with flax seed? Awesome!

Organic sauce. This was tasty and low in calories. Sometimes packaged spaghetti sauces have a ton of sugar, this one did not.

This super stinky cheese made the lasagna. When unwrapped you could smell it in the other room. Delightful.

Chopped up veggies: zucchini, yellow squash, red pepper, red onion.

Sauteed in EVOO and fresh garlic.

Cheese filling: low-fat ricotta, part-skim mozzarella, herbs, salt and pepper and one egg to keep everything together.

Start your layering. First up, a layer of sauce.

and then layers of cheese and veggies.

A layer of sauce goes on top.

Sprinkle some bread crumbs and grated stinky cheese on top. Cover with foil and bake at 375 for 45 minutes. Uncover and bake for 10 minutes.
