Happy Halloween!

This beautiful Sunday started out innocently enough with some pumpkin pancakes.

I used approximately:

2 cups whole wheat flour
1/2 cup Splenda
a little brown sugar
baking powder
1 egg
cinnamon
1/2 can of Trader Joe’s organic pumpkin

Drizzle of honey…

and then….

we turned into Zombies!!

Life as Zombie Mike and Allison continued on as normal. Zombie Mike played some piano…

got caught up on some work…

did some light reading…

got a little studying done…

and of course, dinner! (Zombie Allison also likes to cook)

Mike turned away tonight’s dinner saying her preferred ‘brains’.

Merlot or tasty blood?

Dinner was a impromptu chicken, spinach, artichoke casserole made from things I had in the fridge.

Sauteed some chopped spinach in EVOO and garlic, added a can of artichoke hearts, 1/4 cup Parmesan cheese. Then I added some light sour cream. Cooked 2 chicken breasts with salt, pepper, herbs and added it to spinach mixture. Pour into Pyrex, cover with Parmesan cheese and bake for about 15 minutes at 350. Delicious bubbly goodness. Yum!

We had a few trick or treaters including some of Mike’s students! Hope you had a great Halloween!
