Spaghetti Squash

The sunset this evening was especially beautiful! This was a long day and I was able to enjoy the sunrise as well as the sunset.

Roasted up a giant spaghetti squash for dinner this evening. Cut it in half, scoop out the seeds, and throw it in a 375 degree oven for about an hour. Go do other work while it cooks and gets all tender.

When it comes out of the over, cut it up with a fork. It looks just like spaghetti!

A little tomato sauce and some pesto.

and maybe a glass of prosecco?

Besides being lower is carbs and calories than pasta, spaghetti squash offers omega-3 and omega-6 fatty acids, and vitamin A and C. Good deal! Even the hubby liked it.
