Beef n’ Tofu

Tonight’s dinner was a sort of hodge-podge of items. I am desperately trying to get off the GRE diet (goldfish crackers, black coffee, and self doubt) and back to eating healthy foods. For tonight’s dinner I sauteed up some firm tofu seasoned with Chinese 5 spice and garlic and I made some kale chips. Yum!

With the understanding that none of these items would make hubby very happy, I picked him a giant piece of beef in the form of New York strip steak. I marinated the steak in a little balsamic vinegar, Dijon mustard, garlic, and salt and pepper.

Kale! Rinse and dry kale, drizzle with EVOO, add salt and pepper. Put in 400 degree oven until they are crispy like potato chips. So good! I promise!
