It’s a new year and now that the holidays are over, it’s back to healthy eating. I am insanely busy this week with work, finishing my remaining two doctoral applications (the end is near- wee!) and meetings so a nice (quick) stir fry seemed like a good idea. I kept saying to myself in December ‘just make it to January’ but so far it is just as busy.
My new year’s resolutions include cutting back/giving up diet soda and Splenda. I just consume too much of it and it can’t be good for you. I have already started sweetening my morning Greek yogurt with organic honey instead of a spoonful of Splenda. I also want to be more active, I’ll just have to make time.
Easy Stir Fry ingredients:
Medium Savoy cabbage
low-sodium soy sauce
stir fry sauce (Kikkoman)
Chinese five spice
lean ground beef- him (leftover from Sunday pizza night)
firm tofu- her
I cooked the cabbage for a few minutes by itself in a tablespoon of peanut oil in the ol’ wok.
Added both of these guys.
Then added my chopped veggies and sprouts.
His and Hers. I browned the beef with some garlic and soy sauce, Chinese five spice, seasoned with salt and pepper.
Hubby added some supa hot sauce (of course)
I used firm tofu because I wanted nice little crispy squares but it just crumbled. Oh well, it was still tasty just not the intended texture.
