We had a wonderful culinary experience while in Arizona. I haven’t gotten around to posting about it yet but we sampled some fabulous Mexican/Southwestern cuisine as well as Native American fusion. I was in to mood to create something spicy but also quick so I came up with this.
Southwestern Vegetarian Stew
You need this:
Saute an onion in some EVOO and then add your ingredients (except broth).
Add the broth and bring to a boil. Let the soup simmer for about 20 minutes. Season.
I served it with a dollop of Greek yogurt because it was spicy! Then I drizzled some organic honey on top. This may sound strange but it was delicious. Sweet and spicy.
