Indian Lentils and Roast Cauliflower

First off, prep your cauliflower and get it in the oven.

Roast Cauliflower

1 tablespoon of each (roughly):
Garam masala
Ancho chili powder
salt and pepper

Cut up head of cauliflower into pieces. Combine spices with 2 tablespoons of extra virgin olive oil in a mixing bowl and coat cauliflower with mixture. Place in over at 400 degrees for about 15-20 minutes.

Then get a big clove of garlic going in some oil.

Add a can of petite diced tomatoes, 1 cup of cooked lentils (these are Arrowhead Mills organic green lentils) and spices: garam masala, chili powder, salt and pepper.

Served with a dollop of fat free Greek yogurt. Enjoy!
