Here’s a recipe for a healthy chicken salad using Greek yogurt and light mayo made with olive oil.
3 boneless skinless chicken breasts
chopped dried figs
1 medium gala apple
1 tup Chobani Greek yogurt
a few tablespoons of mayo
salt and pepper to taste
First, place your chicken breasts in a oven safe dish with a little chicken stock and salt/pepper at 350 for about 40 minutes depending on the size/thickness of your chicken. Hop on treadmill.
Chop up the cooked chicken.
Animals will start circling you like sharks.
Figs! I was going to use cranberry but these have less sugar, protein, and are lower in calories.
Mix everything together.
Serve on a bed of lettuce.
