Healthy Chicken Salad

Here’s a recipe for a healthy chicken salad using Greek yogurt and light mayo made with olive oil.

I used:

3 boneless skinless chicken breasts
chopped dried figs
dill relish
1 medium gala apple
sliced almonds
1 tup Chobani Greek yogurt
a few tablespoons of mayo
salt and pepper to taste

First, place your chicken breasts in a oven safe dish with a little chicken stock and salt/pepper at 350 for about 40 minutes depending on the size/thickness of your chicken. Hop on treadmill.

Chop up the cooked chicken.

Animals will start circling you like sharks.

Figs! I was going to use cranberry but these have less sugar, protein, and are lower in calories.

Mix everything together.

Serve on a bed of lettuce.

Yum!

    Thanks for making us look so delicious! Lots of fans use 0% Plain as a substitute for mayo, but it's great to see it used as a complement as well. Well done!

    Thanks! You know, I didn't even use that much mayo, just a little and it was so decadent-like deli chicken salad. My husband loved it! I really like using Greek yogurt as a substitute for mayo or heavy cream. It is a staple in this kitchen!
