What you can do with six dollars….
At the market I picked up two chicken breasts, a small can of pizza sauce, and an assortment of veggies.
Zucchini, carrots, turnip, and potatoes for roasting.
Chop up the veggies into even sized pieces, drizzle a tablespoon of EVOO , herbs, salt and pepper.
Place in a greased pan and put them in a 375 degree oven.
Place the two chicken breasts in a pyrex, dump a can of pizza sauce on top, and season with salt and pepper and herbs.
This is really easy. Honestly, it probably took me about 15 minutes total to prep and get it all into the oven. Once the chicken and veggies were in, I tackled several other tasks on my to-do list including 30 minutes on the treadmill, answering email, returning calls, load of laundry, etc. When the chicken is cooked through and the veggies are tender (about 45 minutes)- voila!- a healthy, fast, cheap dinner! Plus, there was plenty leftover for my lunch the next day.
You can’t get two value meals for 6 bucks!
