Here is a quick Asian inspired soup full of veggies that is perfect for a weeknight…
Beef (omit for vegetarian version)
Saute up the beef in some EVOO with chopped garlic till the meat browns a bit, then saute the veggies. Add water.
The add the miso soup mix. This stuff if SO good. It is an instant miso soup mix that you add to hot water. It has 20 calories per serving and would be great for work lunches or traveling.
Add tofu so it can soak up all the flavors.
Add the rinsed, chopped kale, bring soup to a boil, turn down heat, cover, and let it simmer for about 20 minutes.
I know it is a little weird to have beef and tofu in the same dish but Hubs really wanted beef and I didn’t so much. This way, we can each fish out what we want and are both happy.
