Skillet Gnocchi with Spinach and White Beans

There was a low, full moon out there tonight.  Spring is coming.  Can you feel it?

I came across this recipe over at Eating Well for skillet gnocchi, chard and white beans.  I found this whole wheat gnocchi made with sweet potato flour and had to try it.  I used frozen chopped spinach instead of chard although I am sure chard would be delicious.

I placed the gnocchi in boiling water until they were floating, about 5 minutes.  Then, I sauteed the spinach in a little EVOO and added beans, marinara sauce, and the cooked gnocchi.

Yum!

Don’t forget a sprinkle of grated parm!

    I LOVE the pix (and they’re an important part of your blog) – don’t get me wrong, but it would be nice to print the recipe sans pix. Any ideas?
