After School Snack

When I got home from work yesterday, my stomach was growling loudly.  I had eaten lunch around 11:30 and by 6 I was starving.  Hubs and I had plans to see a movie and have a late dinner afterward.  I knew I wouldn’t make it so I whipped up a little snack that I may have enjoyed with a glass of chardonnay.

Spinach, goat cheese, crab dip! Yum!

Saute up some spinach in a little chicken broth, melt about 1/2 an ounce of goat cheese, and add some garlic salt, pepper and red pepper flakes.  Then I added a can of white crab meat and Greek yogurt.

Serve it up with some organic baby carrots and toasty bread cubes.

This totally hit the spot and I wasn’t even remotely hungry again until late.  BTW we saw Rango, the Johnny Depp lizard movie, and it was really cute!
