Tonight’s dinner was another slow cooker favorite. Yesterday evening I placed all the ingredients in the crock pot, put the lid on and put it in the fridge. This morning before leaving for work I turned it on low and ran out the door.
2 lbs grass-fed black Angus beef tips from Harvest Hills
1 big can crushed tomatoes
1-2 cups of beef broth, add more liquid as needed.
1 cup pearl barley
1 medium onion, chopped
2-3 cloves of garlic
salt, pepper, thyme
Place ingredients in crock pot. Turn on low for 6-8 hours. Come home and enjoy with a slice of Italian bread and a mixed green salad!
Calvin is too cool for school (and very interested in the delicious smells of beef simmering all day)
After dinner I whipped up some chocolate cookies for my sickly hubby. He is feeling a little better but still nursing some annoying, lingering symptoms.
