Tandoori Chicken and Grilled Veggies

My husband had two collaborators on a project over to the house the other day.  They were planning to meet at lunchtime and hubby mentioned carry out or getting something delivered.  I have issues with getting carryout for a couple reasons, it’s usually expensive and unhealthy.

I was working from home that day so it was no big deal to whip up something.  I had a few things around the house including some zucchini, summer squash, and a few cherry tomatoes which I grilled up on my cast iron griddle.  I love this thing!

I marinated a package of boneless, skinless chicken tenders in a 6 oz. tub of Greek yogurt and a packet of Tandoori seasoning from World Market.

Chicken and veggies served with jasmine rice, family style.

Inexpensive and much healthier than Chinese or pizza right?
