Shrimp and Brussels Sprouts

After yesterday’s meat extravaganza, tonight’s dinner was light and quick.

Shrimp on the grill with steamed Brussels sprouts!

Shrimp Marinade

About a tablespoon of Extra Virgin Olive Oil
Smoked Paprika
Garlic Salt
Red Pepper Flakes
Salt
Pepper

Place shrimp of skewers and brush on the marinade.  Grill for a few minutes of each side until they are pink/opaque.  Drizzle lemon juice over before serving.  Serve with steamed Brussels sprouts with a pat of Earth Balance, salt, pepper.

Grilled shrimp are low in calories/high in protein, Brussels sprouts are high in vitamin K, C, fiber, and a host of other good stuff.
