Grilled Chicken and Easy Fresh Summer Veggie Salad

What a gorgeous Sunday!  We had a late lunch/early dinner because Mike had work in the afternoon and then we were headed into the city to watch the Tony awards with some friends.  I had this basket of veggies that I wanted to use so I cut them up and made a fresh, summery salad.

1 mango
3 medium tomatoes
1/2 red onion
1 large cucumber, peeled
A few small balls of fresh mozzarella

Dressing: 2 teaspoons of red wine vinegar, about a tablespoon of EVOO, salt.  Chop everything up and place in bowl.  Pour over dressing and refrigerate until ready to eat.

I used more Butt Rub on some chicken legs.   Love this stuff.  You are purchase it here.

Had a lot of fun last night but now it’s back to work!  This week is going to be super busy.  The hubby starts  his summer schedule (theatre camp all day/full studio teaching at night) and I have work and prep for school!  Also, we have contractors in our house this week fixing a variety of things.  No more crapshack! Lots to do!  Bye!
