It is HOT in Chicago people! With excessive heat warnings, a heat index in the 100s and pollution alerts, all I want to do is stay indoors!
Dinner last night was a combination of fresh tomatoes, cucumbers, feta cheese, and some lamb (for hubby) brought together for a light, refreshing summer dinner.
2 cucumbers, peeled and cubed
2 Roma tomatoes, chopped
1/2 red onion, finely chopped
1/2 pound feta cheese, cubes
3/4 cup Greek Yogurt
Juice of 1 lemon
1 medium shallot chopped
1 teaspoon dried thyme, oregano
1 teaspoon sugar
salt and pepper
Mix all the ingredients well.
Add chunks of feta.
Drizzle yogurt sauce on top.
For dessert, a refreshing, low-calorie treat that will keep you cool!

1/2 watermelon, cubed, rind removed
1/3 cup sweetener (Splenda, stevia, raw sugar, etc)
2 limes, juiced
Place watermelon, sugar, and lime juice in the blender. Carefully blend and pour into a dish. Cover with plastic wrap and place in freezer for at least a couple hours. Remove from the freezer, scape it out with a fork and enjoy!
Ready to go in the freezer
Refreshing and served in a fancy pants martini glass.
You can make this dessert with any fruit you like! Pink grapefruit, strawberry, or how about mint green tea? I bet if you blended in some vodka to the granita mixture this would make a fabulous cocktail on a hot summer night!
