Healthy Chicken Salad and Assorted Goodies For Ravinia

I am way behind on blogging but I have a ton of things in the can- a trip to Door County, a trip to Michigan, and of course the typical shenanigans that occur in my kitchen- but lets start here.  A little while back the hubby and I hopped on a Metra that was on its way to Ravinia to see Lord of the Rings on the big screen accompanied by live orchestra and choir.  In a word? Awesome.

The theme was ‘healthy’ so I whipped up a batch of yogurt based chicken salad.

Healthy Chicken Salad

3 skinless, boneless chicken breasts, chopped
2 tablespoons sweet relish, 1 tablespoon of Dijon mustard
1/2 chopped red onion
2 tablespoons chia seeds
3/4 cup fat free Greek yogurt
1/4 cup Olive Oil Mayo
2 tablespoons lemon juice
salt and pepper

Season chicken breasts and bake at 350 until no longer pink.  While they are cooling chop onion and mix mayo with Greek yogurt, add lemon juice.  Chop chicken and add everything in a bowl.  Keep in the fridge.

Feel free to add whatever you like, nuts, celery, dried cranberries or raisins, etc.

Don’t forget your fruit!

    That chicken salad looks delicious, I love the idea of making it with greek yoghurt – yummy!
