For dinner this evening I needed something that was quick and easy. I am exhausted after a full day of seeing Northwestern patients and an evening filled with work on one of several papers due and pages and pages of reading. I’m pooped, ya’ll.
Luckily, I had a few items around the house to whip up a respectable meal thanks to a little care package bearing fairy (ignore the balsamic, I didn’t use it).
When I got home from work yesterday, my stomach was growling loudly. I had eaten lunch around 11:30 and by 6 I was starving. Hubs and I had plans to see a movie and have a late dinner afterward. I knew I wouldn’t make it so I whipped up a little snack that I may have enjoyed with a glass of chardonnay.
Spinach, goat cheese, crab dip! Yum!
Saute up some spinach in a little chicken broth, melt about 1/2 an ounce of goat cheese, and add some garlic salt, pepper and red pepper flakes. Then I added a can of white crab meat and Greek yogurt.
Serve it up with some organic baby carrots and toasty bread cubes.
This totally hit the spot and I wasn’t even remotely hungry again until late. BTW we saw Rango, the Johnny Depp lizard movie, and it was really cute!
I whipped up tonight’s dinner in record time. It has been a long day and I wasn’t in the mood, nor did I have the energy to spend a ton of time cooking. I picked up some thin sliced chicken breasts from the market. I like the thin sliced breasts because they cook up really quickly.
Dredge them in some coating (Italian bread crumbs, herbs de Provence, garlic salt, pepper) then place them in a hot skillet that is coated well in non stick pan spray. Then I placed them in a 375 degree oven with some marinara sauce on top for about 10 minutes.
