It’s been a crazy weekend. Class all day on Saturday followed by studying and more studying but that didn’t keep me from squeezing in a little kitchen time.
Fall is here!!!
I love fall. It is probably my favorite season. And, I have a confession to make. I didn’t grill out for Labor Day. I know it is the thing to do on the last hoorah of summer but I’m kind of over it and with the cooler temps and fall in the air I wanted comfort food!
Grilled Eggplant Rolatini
Brush1/2 inch slices of eggplant with EVOO, grill each side for 3 minutes.
I’ve made ratatouille before but I wanted to make a version that looked like the ratatouille from one of my favorite Pixar films of the same name. I got a lot of good tips on how to do this from Smitten Kitchen. First, I thinly sliced an eggplant, two tomatoes, a zucchini, and a red pepper. You can use whatever you have around, summer squash, etc..
I was excited when I came across this recipe over at the Mayo Clinic website because it meets all of my criteria- It is healthy, inexpensive, and it doesn’t require the oven. Also, it is a great way to use up a bunch of garden tomatoes. I have yet to experience garden fresh tomato burn out but I hear it happens.
Tis the season for giant, delicious peppers that are perfect for stuffin’
This summer has been a whirlwind of activity and in all the hub hub I totally missed the blog’s 1st birthday! Yes, it has been a year since I started the blog! My first post was on July 11, 2010. The food? Fish Tacos. So in honor of that post, I made another batch of summer tacos enjoyed with a lovely and refreshing French Rose.
On Sunday morning hubby and I took a walk into downtown Evanston to grab some coffee and a bite and while walking past the purple line hubby said ‘hey, do you want to get on and head downtown?’ It sounded like a lot of fun so we hopped on and the next thing we knew, we were at the Field Museum to check out the Horse and Whale exhibits.
