Healthy Chicken Parmesan

I came home this evening to some groceries picked up by the husband. They included some chicken tenders and red sauce. At first I thought I would just bake or grill the chicken but I really wanted to try something different so I came up with this recipe for a healthy version of chicken tender parmesan.

I dredged the tenders in a mixture of Italian bread crumbs, grated parm, herbs and seasoning.

Then placed them in a skillet with plenty of no calorie olive oil skillet spray so the coating could get crispy.

Then I placed the tenders in a Pyrex to finish off in a 375 degree oven for about 15-20 minutes. I poured a little sauce on top.

I have to post a pic of these! A little gift from my BFF Andrew. They bloomed today and they just make me smile! I can’t wait until Spring when my tulips outside bloom. Thanks Drew for a little glimpse of warm days ahead! I needed it.

Okay, back to dinner. For hubs, I made some whole wheat penne with peppers and for both of us, some spinach with 1 ounce of goat cheese melted in and a dash of parm, salt and pepper.

Tomorrow is Friday!!! I have a very busy weekend ahead with an IAMT state meeting/CEU and, of course, our Valentine’s Day plans!
